The week was rather uneventful, which is just fine with me. I was just tickled with how these Chocolate Chip Granola Bars turned out. And our girls are excited to pack them in their school lunches this week! It was so fun to finally meet Catherine, author of the blog Weelicious , this past summer. Then the following month, I met her in person at the Blogher conference in Chicago. And funny. I love when people can make me laugh! I even found our daughters paging through Weelicious Lunches , and then making suggestions for their lunch boxes the next day.

How cool is that?! I love the colorful fresh food collages in the book. So pretty! Hatti and Tessa are quickly becoming avocado lovers, and I know this dip will disappear in no time at all. Maybe if I make a double batch, there will even be some left to pack in their lunch boxes the following day?! While our family loves these ingredients, and we eat them regularly, guidelines for lunches, snacks, and birthday celebrations at school and church are becoming more and more restricted as food allergies become more and more common.

Crunchy, with a little bit of chewiness, they are perfectly sweetened with honey and a bit of brown sugar. And every bar has a few chocolate chips, too. Because I believe that a little chocolate makes every day a whole lot better! Line a cookie sheet with parchment paper. In a large bowl, combine the oats, flour, coconut, brown sugar, cinnamon, salt, and chocolate chips.

Stir to combine. In a small bowl, whisk together the canola oil, vanilla, and honey. Pour wet ingredients over the oats mixture and stir well to combine. Bake for about 40 minutes, or until golden and dry to the touch. Cool on the cookie sheet for 10 minutes, then cut into desired size bars with a serrated knife. Wrap individually in parchment paper or wax paper.

This is just what I was looking for. These bars look delicious. In the mornings I like fruit, granola and yogurt. In the afternoons I like veggies with hummus or cheese and crackers. My favorite snack is a handful of frozen blueberries and pecans. These look so yummy! I love making ranch dip with carrot sticks, except I end up eating too much and ends up not healthy! I love them! Great looking bars. I try to eat fruit or nuts if I am eating healthy. These granola bars look awesome!

And my favorite healthy snack is probably Wheat Thins. LOL I picked these too!! I have made them three times since I got the book a few weeks ago though admittedly, two of the times were for filming the video and shooting the recipe haha. We enjoy peanut butter and apples, dried fruit, Nutella toast, cheese sticks, but I am dying to make these granola bars because I am addict of store bought granola bars.

I love Peanut butter and apples…. Those date and walnut balls from the website are fab and so quick and easy to make — perfect. My favorite healthy snack is from the first cookbook from Catherine, chewy granola balls. Those are delicious! Strawberry and Mango smoothies with non-fat, plain yogurt. Sometimes an added banana to switch it up. I love to munch on raw almonds and also love smoothies!

I was just looking for something to make for my daughters lunch tomorrow and these look great! These granola bars are really good. I make mine without the coconut since nobody here likes it, but they still turn out great. We wrap them in plastic wrap so we can take them with us.

Right now, we are crushing on Dragon fruit and asian pears. We love fruit, with or without yogurt. The laughing cow blue cheese has been my favorite lately. The popcorn along with some glazed nuts if you wish can fill you up nicely.

The granola bars look delicious! We generally snack on easy to prepare foods like sliced peppers, tomatoes, cucumbers and berries, bananas, and apple slices.

This summer I even was able to hide some astaxanthin in there. Not too much, but one or two caps. My favorite healthy snack is homemade granola and almond milk, or whole grain crackers and organic cheese.
